Mexican restaurant chain opening Grand Junction location

A restaurant chain specializing in fresh Mexican cuisine plans to soon open its new location in Grand Junction.

Cafe Rio Mexican Grill is scheduled to open Jan. 4 at 2412 F Road. The restaurant is the second in Colorado and 38th overall for the chain, headquartered in Salt Lake City.

“Opening a second location in the great state of Colorado is a thrill for us,” said Bob Nilsen, chief executive officer of Cafe Rio Mexican Grill. “The people of Colorado who enjoy a healthy and active lifestyle seem to appreciate our commitment to freshness and top quality real food made from scratch every day in our restaurants.”

As part of a grand opening celebration, Cafe Rio Mexican Grill plans to donate $2,500 to Mesa County School District 51.

Each Cafe Rio restaurant prepares food from raw ingredients each day, squeezing limes and scooping out avocados by hand and cooking tortillas fresh by the minute. Cafe Rio received the 2009 Sandleman and Associates Quick Track Award of Excellence and was the top-rated quick-service Mexican restaurant in the country for customer satisfaction.

Cafe Rio Mexican Grill operates a total of 38 restaurants in six states and expects to open 11 to 15 locations this year. For more information, visit
