Jacqueline and Jose Calvillo pay close attention to the ingredients that go into the food they prepare for their catering business. That includes fresh tomatoes and jalapenos and the roasted chilis used to make traditional New Mexico-style cuisine.
“You can taste the difference,” Jose said.
The couple operates Mesa Feliz Catering. Working out of the commercial kitchen at the Business Incubator Center in Grand Junction, they provide services for local festivals, parties, and other events.
While Mesa Feliz Catering specializes in authentic Mexican food, the company can provide other fare, Jacqueline said. “We can do a variety of different foods.”
The couple has a busy summer ahead, she said, with festivals and weekly farmers markets. The firm also caters everything from open houses to office parties to receptions. “All of life’s events,” she said.
Jacqueline said she started the catering business last year as something of a labor of love. “My passion is cooking.”
It’s something she said she learned from her mother, Virginia Rivera, who works with the couple.
Mesa Feliz Catering can provide burritos, chips and salsa, tacos and tamales. Biscochitos, traditional New Mexican cookies flavored with cinnamon and anise, also are popular, Jacqueline said.
Food is prepared with fresh ingredients just before an event, then transported to the site for service, she said.
Mesa Feliz Catering also offers competitive pricing, she said. “Our prices are more reasonable.”
