Plinio Viana will share his experience with Brazilian cuisine and cooking techniques at Colorado Mesa University in Grand Junction as part of the Sodexo Global Chef Program.
The program enables Sodexo chefs worldwide to travel to different countries for month-long residency programs to share their talents with local culinary staff as well as students and faculty.
Viana lives in the Brazilian state of Minas Gerais, which is known for its cheeses, grains, meats, sweets and the flavors of its local dishes. He works as a gastronomic consultant in creating dishes for Sodexo locations in Brazil.
Viana holds a master’s degree in hotel management. He’s managed commercial and industrial kitchens and trained chefs to prepare and serve at events with up to 10,000 guests.
