A Palisade hotel has announced plans to open a fine dining venue.
Caroline’s is expected to open in the Wine Country Inn in April. A grand opening celebration is planned for May.
The menu will offer classic French foods with a nouvelle cuisine approach. Colorado products will be used whenever possible. Signature dishes will include rainbow trout, lamb chops, steaks and fresh Palisade fruits and vegetables. Prices will range from $20 to $40.
Caroline’s will feature early Victorian decor. With only 10 tables at the venue, reservations will be required.
The Tapestry Lounge at the Wine Country Inn will revert to its original concept in serving tapas as well as sandwiches, soups and salads. The Wine Country Inn also serves guests wines, cocktails and beers each afternoon starting at 5.
Jim Siemens, executive chef, and Jesse Wilson, chef de cuisine, will run the kitchen that will serve both Caroline’s and the Tapestry Lounge.
Joe Scanlon, operations manager and certified sommilier, will oversee food operations and the wine cellar. Scanlon plans to stock the wine cellar with vintages not only from Colorado, but also around the world.
