A professor and his student earned an all-expenses-paid trip to Wisconsin as winners of a national cheese recipe contest.
Wayne Smith, an assistant technical professor at Western Colorado Community College in Grand Junction, and Kelvin Shaw, a culinary arts student at WCCC, were among three teams winning the contest sponsored by the Wisconsin Milk Marketing Board and Emmi Roth USA.
Smith and Shaw created a recipe for chile relleno croquetas with chipotle pine nut romesco dipping sauce. The contest required that teams include a faculty member and student and use Roth brand fontina cheese.
Smith and Shaw won a five-day, four-night trip to the Center for Advancement of Foodservice Education for what was described as an artisan and specialty cheese immersion.
